Protein Packed Key Lime Pie

Key Lime Pie is one of my favorite desserts, and being gluten free it isn’t easy to just grab one at the store or out for desert. So alas I decided to make my own, with a macro-friendly twist. Below are the ingredients + details, enjoy!

MACROS: 382 CALORIES | 18G PROTEIN | 29G CARBS | 19G FAT | 1G FIBER servings: 1

Ingredients:

  • 4 light laughing cow wedges

  • 2 Vanilla honey graham crunchy cookies (can find them here - I get these at the grocery store!)

  • 1/4 tsp vanilla extract

  • 1/2 tsp butter, melted

  • 1 tsp granulated sugar

  • 1 egg white

  • 15g nonfat greek yogurt

  • 1/4 scoop Key Lime Pie protein powder

Details:

  1. Crush the vanilla honey graham crunchy cookies and mix with the milted butter until it creates a crust consistency. Pat into the bottom of your baking dish (I greased it to be safe!) and set aside.

  2. In a separate bowl, mix the filling by whipping the light laughing cow wedges, sugar, vanilla extract, and non-fat greek yogurt until smooth. you can use a mixer for this, but since it is such a small portion, I felt that was a little much and just used a fork!

  3. Add the egg white and Key Lime Pie protein powder into the filling mixture and whip until smooth.

  4. Pour the filling over the crust and place the baking dish on top of a cookie sheet before putting into the oven. This will help prevent the bottom from getting burned.

  5. Bake at 350F for 30 minutes, then let cool on the counter for about an hour. Place into the fridge to continue setting.

  6. Enjoy!
