Homemade Burrito Bowls!
Grocery stores are running low on every day supplies so it’s time to get creative with recipes! Here is a simple recipe that can be made with mostly pantry or frozen food items. It is super quick to make and tastes delicious! This recipe can very easily be modified with any simple ingredients you find at the grocery store. Feel free to add or take away any items of your choice! Enjoy :)
Ingredients:
chicken breast, chicken thighs or protein of your choice!
white or brown rice (tip: if they run out in the aisles, check the freezer section! I saw some microwaveable brown rice packs there!)
frozen corn
canned black beans
canned chopped green chiles
lime (or lemon/lemon juice if you don’t have any!)
olive oil
salt to taste
pepper to taste
garlic to taste
optional: romaine lettuce, cilantro, sour cream, hot sauce
Directions:
heat cast iron skillet on medium to medium-low heat (these can also be baked in the oven!)
rinse protein and pat dry
in a mixing bowl, add protein, salt, pepper and garlic, mixing until all pieces of protein are coated with seasoning
prepare white or brown rice as directed on packaging
once skillet is warm drizzle with a tbsp of olive oil
place protein on the skillet. if using chicken, let cook for about 6 minutes on each side
while chicken is cooking, prepare frozen corn as directed on packing and heat beans in a microwaveable bowl for 2 minutes
once all ingredients are fully cooked, prepare your bowl with the toppings of your choice!
