guacamole
I’m not the biggest avocado fan. There I said it! But there are some things that I have to make in order to keep my husband happy and I do make a pretty awesome guacamole, or so I’ve been told. BONUS: this recipe also makes you a fantastic pico so its a win win. So here is my not-so-secret secret recipe. Remember, I’m a big fan of simple!
Ingredients:
2 avocados
2 tomatoes (I like the ones on the vine)
1 small red onion
1/4 cup cilantro
Juice from 2 limes (if they are tiny like the one’s I grabbed from wegmans today then you’ll need 4)
1 tsp salt
jalapeño (optional)
Directions:
Wash all the produce! Especially these days.
Dice the tomato, red onion, as much as the jalapeño as you prefer and mix together in a bowl. Tear the top leafy part of the cilantro off from the stems and chop 1/4 cup full, add to the bowl. Stir in lime juice and 1/2 tsp of salt.
Give it a taste! Add more of whichever ingredients you prefer, I usually tend to add the other 1/2 tsp of salt in. Once you have your desired taste, leave this to the side. Congrats, you just made the pico :)
In a seperate bowl, remove avocado from the skin and remove the pit. Mash avocado with a fork to desired consistency. I tend to prefer mine on the creamy side with a few chunks here and there.
Once you have your desired consistency for the avocado, add in about half of the pico mixture and a scoop or two of the juice at the bottom of the pico bowl.
Give it another taste and add any additional amounts of the above ingredients.
