chickpea + bell pepper salad
You have to try this! This is such a staple in my family, especially during the summer time, but I loooove it all year round! It’s a perfect go-to for a refreshing side or quick veggie snack!
Ingredients:
2 15oz. cans of garbanzo beans/chickpeas
3 bell peppers (I prefer the red, orange and yellow!)
1 handful of parsley
3 T extra virgin olive oil
salt to taste
fine black pepper to taste
garlic powder to taste
Directions:
Open the garbanzo beans and pour into a colander to drain out the liquid. While that drains, chop the bell pepper and parsley.
Mix all ingredients together and take a quick taste to make sure your seasonings are to your preference!
I like to let it sit for at least 20 minutes so that the flavors soak together but it can be enjoyed right away!
